冬令進補之美食菜譜

蘿卜燒排骨 

功效:補肝明目 主料:豬排骨500克、蘿卜500克 

做法:

1、蘿卜切成塊,蔥切段,姜切片;

2、超過上火,放油;

3、將蔥、姜和蘿卜放入,煸炒至上色,加入料酒、醬油、鹽、味精、白糖和清水;

4、放入排骨,用火燒開后,轉用小火燒25分鐘,待汁收濃且口味濃香時,加入水淀粉即可。 


清燉馬蹄鱉 

功效:促進造血功能,增強體力 主料:甲魚1只(重約750克)、火腿骨1根、火腿肉100克 

做法:

1、將清洗處理完的甲魚放入開水中,煮至水再開,撈出瀝水;

2、火腿切成4大塊;

3、將甲魚整齊地放入砂鍋中,把火腿、蔥、姜和火腿圍在甲魚四周,加入雞清湯和料酒,蓋鍋燜??;

4、旺火燒開后,去除浮沫,放入冰糖,轉用微火燉1小時左右。揀出姜和火腿骨,放鹽;

5、再將火腿撈出切成片放入鍋里,淋上熟豬油,撒入白胡椒粉即可。
